Buttermilk Baked Tomatoes recipe - 61 calories


Ingredients:

3 medium tomatoes

1/2 cup buttermilk

1/4 cup Parmesan cheese or Romano cheese, grated

your favorite herbs or spices, to taste

Preparation:

1. Cut tomatoes in half; seed them and place them cut side up in broiler safe baking dish.

2. Pour 1 tablespoon of buttermilk into each tomato half, then sprinkle the top of each with cheese, and your favorite herbs or spices (oregano, basil, tarragon, garlic, or rosemary) to taste.

3. Bake at 350 degrees F for about 15 minutes, then place under the broiler until lightly browned.
Servings: 4

Pineapple Cilantro Punch - 78 calories


This healthy recipe is a great treat to add to your diet. Don't be put off by the odd mix of fruits and vegetables.  This light drink packs a 0-cholesterol, high fiber portion of your daily fiber intake.

Ingredients:
2 cups fresh pineapple, cut into cubes

1/2 cup water

2 tablespoons sugar

1/2 cup fresh cilantro, firmly packed

(*add Celery 1/2 cup as fiber bonus)

Preparation:

1. Blend pineapple and cilantro, in a blender, purée all ingredients until smooth.

2. Pour the mixture through a sieve, discarding the solids.

3. Serve over ice. Serves 4
